Integrate or document other repositories, configuration, and services that are used by Remote Settings

The goal of this repository is to be the source of "all things" Remote Settings. Even still, it makes sense to keep some configuration and application logic outside of this repository.

There are some repositories and other sources of documentation that affect how Remote Settings behaves in Dev, Stage and Prod, but that aren't mentioned in this project's documentation like Remote Settings Lambdas, permissions config, etc.

For this issue, we should:

• identify what configuration and which services we're missing from this repository. For each of those items:
  • If we can add those things here, create new issues to track that work
  • If we can't add those things, document them to the extent possible in this repo
